We would like to stay in hotels along the way and then rent a camper (either pop-up or airstream) close to Grant Village campground at Yellowstone. My husband and I have two young sons -- 6 & 8.
BTW, if you are thinking of visiting Yellowstone, Grand Teton and another National Park or two, it is worth considering buying the Annual National Parks pass. The pass is $80 for every National Park. It's $50 alone to visit both Yellowstone and Grand Teton (or $30 to visit just Yellowstone).

You might consider that route, or cut off at Sheridan and take Rte 14, The Greybull Highway, all the way to Yellowstone. I-90 is kind of boring going up into Montana unless you want to visit the Little Bighorn Battlefield at Garryowen. Since you have three weeks, consider going south to the Grand Tetons and Jackson Hole after Yellowstone.
Returning via the Grand Canyon would mean a full 5 days for the trip home from Yellowstone, and that means 9 of your 14 days would be taken up driving. Spend 3 days at Yellowstone, which is close to a minimum to see all of the park's main highlights, a day in Cody, and a day at the Grand Canyon, and your time would be completely filled.
