I have tried numerous times to sign into my KDP account after approval on my phone, but the verification still spins around. I'm surprised I got to login here. I wasn't confident enough to go to my bookshelf just incase I couldn't get in. Now that I've posted perhaps It might work this time.

I have separate shopping-on-Amazon and publishing-on-KDP accounts. But if you want them separate, you really need to have them separate from the beginning. Since you've already set up a KDP account with your "shopping" coordinates, you would have to cancel that KDP account (making sure your shopping account wasn't canceled along with it) and start
As I login into my KDP account to change my phone number. They will ask me to verify my identity be sedning OTP to my previous phone number. AMAZON has a 1-800 customer service. But that is for the united state, whereas I am. in Taiwan. So, how can I update my phone number? I don't want such complicate verification at all.
Best case, you get banned from KDP. KDP is a FREE self-publishing platform. It sounds as though you were unfortunately led astray by scammers claiming to be part of KDP. They aren't. KDP offers no assistance, paid or free, on formatting and setting up your book, other than their voluminous Help pages. Break off contact with these folks at once.
